There’s an aromatic quality I often find in young, fresh Clare Valley Riesling that reminds me of the botanical refreshment of a perfect gin and tonic at the end of a hot day: a combination of lime and herbs and a satisfying whisper of bitterness – like grapefruit pith – that is utterly delicious and more-ish. And I found that character in spades in this great example of riesling from Stephanie Toole’s vineyard in Watervale sub-region of Clare. Lovely now, but will also age brilliantly in the cellar.
