Hand-picked from Stephanie’s low yielding vineyard, the ferment is gently plunged 3-4 times a day. The wine then spends 18 months maturation in French barriques, 35% of which are new. This is a text book cabernet that displays the hallmarks of high quality fruit and attention to winemaking detail. Single vineyard, organically grown, this is a tiny quantity available.

Tasting Notes:

Classic cabernet colour – deep and dark.

Also intense is the aroma: black currant, leaf and stylish oak. Concentrated black and red berry fruits are wrapped around vibrant tannins, and supported by really smart oak integration. A hedonistic wine with a generosity of fruit that belies great depth and length. Has a big future ahead yet drinks brilliantly now with a juicy beef steak.
